Sweet potatoes

- Boil whole until tender, I usually poke them with a fork until they feel right.
- Peel them and cut off any undesirable parts, then cut them into 1/2" squares.
- Arrange them in a casserole dish and layer if necessary with butter and brown sugar. The layering depends on what size your dish is and how many potatoes you use. When I made 4 large potatoes and put them in a 9x13 pan I only had one layer. Dab the top with more butter and sprinkle more brown sugar on top. I would say I used about 4-6 Tablespoons of butter and about 1/2 cup brown sugar.
- Bake in a 350 degree oven for about 25 minutes, then cover with marshmallows and bake an additional 5-10 minutes until marshmallows are browned. I didn't see any juices from the butter and brown sugar until I covered the whole thing with marshmallows so you could put foil over the top at some point if you're worried that the brown sugar won't melt. Just don't put foil on after the marshmallows, they will stick to it. While baking, the marshmallows tend to swell quite a bit, but after you take them out they shrink down again.
